How to Make Lemon Rosemary Chicken Thighs
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine extra virgin olive oil, minced garlic, chopped rosemary, lemon zest, lemon juice, salt, and pepper.
- Add the chicken thighs to the bowl and coat them thoroughly in the marinade.
- Chop your chosen mixed vegetables into even pieces and arrange them around the marinated chicken on a sheet pan.
- Slice the remaining lemon and lay the slices over the chicken thighs, tucking in extra sprigs of rosemary.
- Place the sheet pan in the preheated oven and roast for 35-40 minutes.
- Once done, let the chicken rest for about 5 minutes before serving.
