How to Make Lemon Rosemary Chicken Thighs
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine extra virgin olive oil, minced garlic, chopped rosemary, lemon zest, lemon juice, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them thoroughly in the marinade.
  4. Chop your chosen mixed vegetables into even pieces and arrange them around the marinated chicken on a sheet pan.
  5. Slice the remaining lemon and lay the slices over the chicken thighs, tucking in extra sprigs of rosemary.
  6. Place the sheet pan in the preheated oven and roast for 35-40 minutes.
  7. Once done, let the chicken rest for about 5 minutes before serving.
