  • 1 pound Boneless chicken thighs cubed
  • 1 pound Shrimp peeled and deveined

  • 1 cup Bell peppers mix of red and green, chopped
  • 1 can Canned diced tomatoes with green chilies
  • 1 cup Long-grain white rice
  • 4 cups Low-sodium chicken broth
For the Aromatics
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
For the Seasoning
  • 2 tablespoons Cajun seasoning
  • to taste Salt
  • to taste Pepper
For Garnish
  • 1 cup Green onions sliced
  • 1 cup Parsley chopped

Method
 

Cooking Steps
  1. Sauté the chopped onion and minced garlic in a skillet over medium heat until softened, about 3-4 minutes.
  2. Add sliced sausage and cubed chicken to the skillet; cook until browned.
  3. Transfer the mixture to a crockpot. Stir in the canned tomatoes, rice, broth, Cajun seasoning, bell peppers, salt, and pepper.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the rice is tender.
  5. Fold in the shrimp during the last 30 minutes of cooking until they turn pink.
  6. Garnish with green onions and parsley before serving.
