- Preheat the oven to 350°F (175°C). Spread tortilla chips evenly on a baking sheet.
- Sauté curry powder in a skillet over medium heat with a drizzle of olive oil for about 1 minute.
- Add rinsed chickpeas to the skillet and cook for approximately 5 minutes until slightly crispy.
- Sprinkle shredded cheddar cheese over the tortilla chips. Place the baking sheet in the oven for 5-7 minutes.
- Top nachos with curried chickpeas and drizzle with Greek yogurt. Garnish with fresh cilantro.
