  • 2 cups Fresh cranberries Rinse and drain if using frozen.
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 2 large Large eggs
  • 1 cup Whole milk Can substitute with a dairy-free alternative.
  • 0.5 cup Orange juice
  • Zest of 1 orange Adds extra citrus flavor.
  • 1 teaspoon Vanilla extract
For the Glaze
  • 1 cup Powdered sugar Adjust consistency with orange juice.
  • 2 tablespoons Orange juice For glaze thickness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and generously grease a loaf pan.
  2. Rinse the fresh cranberries under cold water.
  3. Combine the dry ingredients in a bowl: flour, sugar, baking powder, and salt.
  4. In another bowl, mix the wet ingredients: eggs, milk, orange juice, zest, and vanilla.
  5. Gradually combine the wet and dry ingredients, mixing gently.
  6. Fold in the cranberries carefully.
  7. Pour the batter into the greased loaf pan and smooth the top.
  8. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack.
  10. Drizzle the orange glaze over the cooled bread.
