  • 1 cup Fresh or canned pineapple chunks well-drained
  • 1 cup Shredded unsweetened coconut
  • 2 cups All-purpose flour or whole wheat flour
  • 2 teaspoons Baking powder
  • 1 cup Granulated sugar adjust for sweetness
  • 2 large Eggs
  • 1/2 cup Vegetable oil or melted coconut oil
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Salt

Cooking Instructions
  1. Preheat your oven to 350°F (175°C). Ensure you grease a muffin tin or line it with paper liners for easy removal later.
  2. Whisk together the cottage cheese, eggs, vegetable oil, sugar, and vanilla extract in a large bowl until smooth.
  3. Combine the flour, baking powder, and salt in another bowl. Gradually fold this dry mixture into the wet ingredients until just combined.
  4. Fold in the pineapple chunks and shredded coconut.
  5. Fill the muffin tins about 3/4 full with batter. Bake for 20-25 minutes or until they are golden brown and a toothpick inserted into the center comes out clean.
  6. Cool the muffins on a wire rack before serving.
