- Preheat your oven to 350°F (175°C). Ensure you grease a muffin tin or line it with paper liners for easy removal later.
- Whisk together the cottage cheese, eggs, vegetable oil, sugar, and vanilla extract in a large bowl until smooth.
- Combine the flour, baking powder, and salt in another bowl. Gradually fold this dry mixture into the wet ingredients until just combined.
- Fold in the pineapple chunks and shredded coconut.
- Fill the muffin tins about 3/4 full with batter. Bake for 20-25 minutes or until they are golden brown and a toothpick inserted into the center comes out clean.
- Cool the muffins on a wire rack before serving.
