- Gently rinse your fresh strawberries under cool water before patting them dry. Carefully cut off the tops of the strawberries and use a small spoon to scoop out a bit of the insides, creating space for the filling.
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, blend the ingredients until the mixture is completely smooth and creamy, just about 2 minutes.
- Gently fold in the whipped cream with a spatula. Be careful not to deflate the airy texture.
- Using a piping bag or a small spoon, fill each hollowed strawberry with your luscious cheesecake mixture.
- If desired, sprinkle a light dusting of cocoa powder or add chocolate shavings to each filled strawberry. Place the strawberries in the refrigerator to chill for at least 30 minutes before serving.
